About Us
'What is Artisanal Cuisine?'

Artisanal: I have been around the world as a chef. I always look for the most authentic, regional and/or city specific, original recipes I can find then add my own twist...but always stay true to the spirit of the artisanal recipe!

Hand-Crafted: We use raw, fresh ingredients to make our food by hand! If you buy a Bratwurst, Mexican Chorizo or Avocado Hummus from us, you can be assured that it has been made in-house! Even our cured meats are made by hand and not bought, this is why you will experience changes in the availability of these items.

Fresh: I always use the freshest ingredients I can find. Be it from Kim's Cabbage Patch in Clermont or from Terri and Parke Family Hydro Farm at the farmer's market, I keep it local and Fresh!  We exclusively use artisanal, hand-crafted European breads from Pane D'or in Winter Garden.

About Your Chef
Peter Clark (Far left in the photo)

Peter grew up on a small family subsistence farm, where he learned, at an early age, how to use local farm fresh, natural ingredients to create home style recipes. He learned the how to preserve and cook from his mother and from his father, how to raise and butcher livestock.

Peter enhanced his classical culinary knowledge at Le Cordon Bleu where he graduated Suma Cum Laude. Since that time, he further explored his passion by travelling the world learning new cuisines throughout the Cayman Islands, Australia and Europe. He has had the honor of working with some of the world renowned chefs including Eric Ripert, Anthony Bourdain, Grant Achatz, Jose Andres, Martin Chang to name just a few. These adventures took place in prestigious hotels such as JW Marriott, Ritz Carlton, Waldorf Astoria, and aboard the mega-yacht The World.

The local cuisines of southern Europe sparked a new passion, charcuterie, which is the art of sausage making and cured meats and you will find these in items on the menu. He wanted to share these experiences with everyone and decided to start his own provision company, WildOak, in order to provide the public with the flavors of old Europe. While developing his company, he took time to learn about the retail side of things by working as a butcher and fish monger at Whole Foods Market. Finally, the opportunity arose to offer his products at Vineyards of the World here in historic downtown Clermont.
